Dublin Liberties Distillery Opens New €10M Whiskey Distillery

After two years of construction, The Dublin Liberties Distillery opened its new €10 million whiskey distillery and visitor experience on Old Mill Street in Dublin’s Liberties.

Production of the distillery’s whiskey portfolio, which includes The Dubliner and The Dublin Liberties, has commenced under the supervision of Master Distiller, Darryl McNally.

“I believe the future for Irish whiskey is in innovation and pushing the boundaries – and that’s what I’ll be working with the team here to deliver – the best Irish whiskey you could have the luck of getting on your lips,” McNally said.

“We’re inspired by the past, but not bound by it, and can’t wait to show the world just how diverse Irish whiskey can be.”

Traditional Practices

The development of the new distillery has seen a complete renovation of a 400-year-old building preserving its original architecture.

The distillery will combine traditional distillation practices with the very latest in modern technologies, and features a unique natural spring water source on site to be used in the distilling process.

It will also feature a cocktail bar and a visitor experience which will open to the public on 25 February, offering visitors an up-close view of modern Irish whiskey-making as it happens.

The distillery said that it will be able to accommodate up to 80,000 visitors in its first year.

“Irish whiskey’s rise over the last few years has been phenomenal, but with talented visionaries like Darryl emerging, I believe we’re now entering its most exciting era yet,” Shane Hoyne, Chief Marketing Officer for Quintessential Brands, majority owner of The Dublin Liberties Distillery, said.

“Darryl is a constant source of ideas and combined with his unrivalled distilling skill, there are no limits for Irish whiskey […] I believe this is the year the Dublin Liberties Distillery will make its mark on the Irish whiskey category.”
