Roe & Co. Whiskey Distillery Launches Summer Garden Experience

Roe & Co. Whiskey Distillery this weekend launched its annual Summer Garden Experience, starting with a pop-up from El Milagro.

The first pop-up of the summer series includes a bright menu of authentic Mexican classics brought to you by Julian Trejo Pascual and his mother, Maribel.

The mother and son duo took inspriation for the menu from their native Mexico City.

El Milagro combines traditional Mexican cooking, sauces from scratch and tortillas made from native Creole corn, along with the best of Irish ingredients.

Speaking about the pop-up, Julian said, “We’re very excited to bring you a very special menu showcasing some of our favourite Mexican classics from our pop-ups, as well as some new creations we’ve been working on behind the curtains for a little while.

“Come and celebrate the authentic flavours of a Mexican summer, paired with some delicious Roe & Co. bespoke cocktails for this menu.

“This menu is inspired by the authentic flavours we grew up with in Mexico, while adding a little of our own twist and creations.”

Roe & Co. is all about collaboration, and the summer series reflects that.

Other pop-ups taking place during the summer include Street By Sunil, The Salt Project and Socafro Kitchen.

Each restaurant will devise a unique tasting menu for their month-long residency and work with the distillery team to create paired custom-crafted Roe & Co. Whiskey cocktails.

The summer garden operates Thursday to Saturday with seatings at 6pm and 8pm at the Roe & Co. Distillery in the Liberties.
